Courgette Surprise: I invented this breakfast treat to combat the negative effects of phytates in bread. (see General Guide to Food)
Ingredients: 1 courgette per person, wholemeal bread, linseed, pumpkin seed oil
Chop the courgettes up into small pieces
Steam until soft
Add 1 tbsp of pumpkin seed oil/linseed oil for each courgette used in a bowl, stir
Grind a tbsp of linseed for each courgette used and sprinkle over the courgettes, stir again
Toast wholemeal bread, add a tsp of olive oil and cover each toast with the courgette mix, there should be enough for two toasts per person. Delicious!
